Nugget Tempe: Inovasi Makanan Pencegah Stunting

Abstract
This research discusses a highly nutritious food innovation, "Tempeh Nugget," developed by Riau University's Real Work Lecture (Kukerta) group in an effort to prevent stunting in Sungai Cingam Village in 2023. Stunting is a serious problem for growing children, with long-term impacts on health and mental development. Indonesian President Joko Widodo set a target of reducing the stunting rate to 14% by 2024. This study involves the socialization of stunting prevention by utilizing food resources, specifically through the food innovation "Tempe Nugget." The implementation method included community service to Sungai Cingam Village, with the implementation of socialization at Posyandu Anggrek. The results showed that stunting can be prevented through attention to nutrition and child growth. Socialization received a positive response from community mothers. With the introduction of the "Tempe Nugget" innovation, it is hoped that mothers can be more concerned about stunting and can create nutritious food menus for their children. In conclusion, stunting prevention efforts need to involve the community innovatively, such as the development of "Tempeh Nuggets" which can help improve children's nutritional status and reduce the risk of stunting.

Abstrak
Penelitian ini membahas tentang inovasi makanan bernutrisi tinggi, yaitu "Nugget Tempe," yang dikembangkan oleh kelompok Kuliah Kerja Nyata (Kukerta) Universitas Riau dalam upaya pencegahan stunting di Desa Sungai Cingam pada tahun 2023. Stunting merupakan masalah serius pertumbuhan anak-anak, memiliki dampak jangka panjang terhadap kesehatan dan perkembangan mental. Presiden RI Joko Widodo menetapkan target penurunan angka stunting menjadi 14% pada tahun 2024. Studi ini melibatkan sosialisasi pencegahan stunting dengan memanfaatkan sumber daya pangan, khususnya melalui inovasi makanan "Nugget Tempe." Metode pelaksanaan termasuk pengabdian kepada masyarakat Desa Sungai Cingam, dengan pelaksanaan sosialisasi di Posyandu Anggrek. Hasil menunjukkan bahwa stunting dapat dicegah melalui perhatian terhadap gizi dan pertumbuhan anak. Sosialisasi mendapatkan respon positif dari ibu-ibu masyarakat. Dengan pengenalan inovasi "Nugget Tempe," diharapkan ibu-ibu dapat lebih peduli terhadap stunting dan dapat menciptakan menu makanan bernutrisi untuk anak-anak mereka. Kesimpulannya, upaya pencegahan stunting perlu melibatkan masyarakat secara inovatif, seperti pengembangan "Nugget Tempe" yang dapat membantu meningkatkan status gizi anak dan mengurangi risiko stunting.
