Abstract

Pineapple skin waste is generally not utilized properly and is considered as waste that should be thrown away. In fact, from the results of phytochemical tests, pineapple skin contains flavonoids, tannins and saponins and contains compounds that have the potential to be antibacterial. One of the uses of pineapple skin waste is as an ingredient in making fermented drinks or what is often called tapache. Fermented drinks produced from processed pineapple skin waste have a fresh taste. Pineapple skin provides a natural sweet taste and a unique aroma to tepache. The use of fruit skin, which is often considered waste, contributes to the sustainability and reduction of organic waste. The purpose of this service is to increase the knowledge of members of the Association of Independent Oil Palm Planters in Seribu Kubah who do not yet understand the use of pineapple skin waste as an ingredient in making fermented drinks from pineapple skin that is widely scattered in Pekanbaru City, where pineapple is one of the mainstay agricultural products produced from Pekanbaru, especially Kualu Nenas Village. With this training, it is hoped that the community can utilize pineapple waste into more useful products
